English Batter Buns

Makes 12 large buns

Ingredients:

1 cup milk

1/2 cup shortening

2 Tablespoons sugar

1 teaspoon salt

1 1/2 Tablespoons dry yeast

2 eggs, beaten well

3 1/2 cups flour

Heat milk over stove top or in microwave. Pour into a large bowl and add shortening, sugar, and salt. Cool to luke-warm, then add yeast and eggs. Beat in flour. Cover and let rise until double in bulk, about 45 minutes. Stir down and spoon into greased muffin tins. If batter is too thick to spoon, squeeze off 12 equal balls of dough and place in greased muffin tins. Let rise again until doubled, about 35 minutes. Bake at 400 degrees F for 10 to 12 minutes.
